The recipe thread.

So here's the deal.  I was at the grocery store buying rootbeer float fixins and I stumbled across some TVP.  I thought of you dudes and bought some.  But now either that TVP thread is gone or the search is a little wonky, I can't tell which.  I couldn't find a recipe thread either.  So I'm starting this one now so dudes can tell me what to do with my TVP.  And post other recipes for whatever.

It's a great substitute for ground beef. I made enchiladas with it once. They turned out well.

I don't know, then.  I've never used that kind.  However, once you get it hydrated again, just use it like you would ground beef.  Put it in spaghetti sauce!  Make burritos with it!  Tacos!  Lasagna!

Ziti is just a type of pasta.  I would boil it, put in a casserole dish then cover it in sauce and some primavera vegetables (Squash, zucchini, broccoli) then cover it in mozz and bake uncovered or with aluminium til the cheese is bubbly.  You could put a layer of ricotta in the middle if you want.

Note: heather marie posting, not Richard. I quit with logging out and logging back in.

I'm in Ft Myers and we're about to go to SuperTarget to get some groceries for some awesome dinners for the next few days. I'm thinking we'll make southwest burgers (ground turkey, cilantro, jalapeno, black beans, corn) and jalapeno lime corn on the cob. Also, I want waterman. It is so fucking hot dudes.

Cinnamon Spaghetti for a Summer Storm Something-etty

* Some spaghetti
* zest of one lemon
* some juice from said lemon
* lots of extra virgin olive oil
* some dried chili seeds
* dash of ground cinnamon
* pinch of salt

1) Cook spaghetti
2) Drain, then mix in all the other ingredients
3) Serve

It's really weird but I'm liking it. And this is fortunate since there's not much else in the house and there really is a giant electric storm going on outside that would make me feel really mean if I asked a pizza delivery dude to venture through it to bring me pizza.

A friend made a similar thing recently with prosciutto crudo replacing the chili seeds and cinnamon and that was amazing. I think prosciutto crudo could work here too as an additional ingredient. Gorgonzola too. But not both at the same time.

Investigations will continue.

I jst tried a recipe I found online for TVP burgers, in hopes of sneaking them to my children.  They were so foul that we told the girls not to eat them  -- we figured they'd taste these and never consent to eat anything but mac and cheese again.   

Does anyone have a non-meat burger recipe?  Beans? Lentils?  We're willing to try anything new, having become not too keen on the standard All-American mad cow/e. coli/antibiotics and growth hormones/killing spree burger.

...I'll see if I can find the recipe I used last time. It was tasty, although it came out more like chickpea patty nuggets than "burger" (actually I was thinking of bringing this camping if I decide it'll keep...)

Falafel burgers are really great.  Just make up some falafel and fry it in a burger shape instead of little round balls.

You can buy falafel mixes in a box from most grocery stores now.  Make it up, then put it into burger shapes.  Make sure they're as tightly-packed as possible.  When you're frying them, let the first side cook well and evenly before you flip them over, otherwise you risk them falling apart.

They are TOTALLY DELICIOUS.  I can just cut the sausage style into patties and fry them up without even adding any seasonings.  SO GOOD.  I use the ground beef for burgers, meatballs, lasagna, and basically anything else where I'd normally use beef.

I fried up some awesome potatoes this morning

the recipe is real easy:

gather four potatoes.  cut them up.
cut up some onions as well.  well, one onion.  maybe half an onion.
oh, and garlic.
hey, is this red pepper still good?  oh, no, we can't use that.  it's got mold on it and it's all ... ick.
oh, but here's some carrots.  chop up a few of those.
heat up butter in pan.
throw all that shit in the pan and cover it up.
cook for about ten minutes, and try to remember to stir everything a few times.  probably throw in your spices during this stage as well.  i used a bit of seasoning salt, LOTS of black pepper, and some rosemary.  keep cooking and stirring and all that.
remove cover, turn down heat, and brown the potatoes some.
throw in a bowl and cover with LOTS of ketchup.
eat till yer stomach explodes.

Highly recommended from a vegan who loves these fake meat products. The beef isn't that great, they went overboard on the liquid smoke flavoring, as most fake meats do. But the sausage is fucking amazing. It's the most delicious fake meat of any kind that I've ever had.

Also, I've been eating the same sauce/gravy on every meal for the past week. Take some Nutritional Yeast, mix it with Olive Oil until it's at a good consistency, you can make it a thin sauce or a thick gravy depending what you intend putting it on. Add in a little Tamari/Soy Sauce and some red pepper. It's amazing, sooooooo good on pasta.

Oh yeah, I forgot the pre-made stuff, that's good too. in any case, here's what I made last time. There was more to the recipe than this, but I ignored it and it was fine.

-2 cans chickpeas, and 2Tbs chickpea water
- 1 garlic clove ( I almost certainly used more than this) mashed
- 1/2 cup ground flaxseed (optional I'm sure)
lemon juice
parsely
2 tsp Cumin
1/2 tsp coriander, cayenne pepper, salt (I left the salt out)

You just kind of blend it all up, then shape into patties and fry. observe yellow fingers. easy breezy.

Guys guys guys, do this:

mix up some brownie mix.  I prefer the duncan hines stuff w/ the hershey's syrup.  also: get a couple bars of baking chocolate.  ghirardelli is good, obviously, so is hershey's.

pour half of the brownie mix in a baking pan.  lay the chocolate on top of that.  pour rest of brownie mix on top of that.

bake at whatever it says on the box until it tells you to stop.  remove from oven, let cool, take a bite and fall down on your knees, thanking the heavens for a thing so perfect and beautiful.

also: it helps to have a lot of milk close at hand.

I made some shakshuka a couple days ago. It's this israeli/west african dish, which came about because I said, 'hm, what involves both tomato sauce AND eggs?' you chop up a whole mess of onions and a whole crap load of garlic, you sautee them in a frying pan, and then you make a tomato sauce with them. then you crack a bunch of eggs over them, break the yolks, and cover the pan as the sauce simmers to set the egg. it's delicious. i had mine over some pasta, with a bit of cheese.
