you get a couple pats of butter, soften them up on the warm stove, press a couple spoonfuls of molasses into them, get 'em mixed up good, and drizzle or spread it over your cornbread like gravy. dipping generally doesn't work because the mixture is so thick and the cornbread so crumbly.

Man, I discovered that they had chanterelles at the fruit shop just next to me today and got so carried away with excitement that I bought them without even checking if they were fresh. I only realised when I was cleaning and cutting them that they were far from it, and even then, I underestimated just how dried out they already were. Usually if you fry them they will excrete lots and lots of water, so that you can just let them simmer in their own sauce, but I didn't see a single drop coming out of these little mushrooms. I ended up having to add quite a bit of water, and more cream than I had planned, to get them anywhere near the texture I wanted, and, unsurprisingly, they just didn't taste the way they usually do. And yet it turns out that even imperfect chanterelle sauce still tastes more delicious than just about everything else in the world (also see: chestnuts).
