According to Lucasfilm, the 2004 Special Edition is the canonical version of the original trilogy, even though the original, unaltered theatrical editions were first released on DVD on September 12, 2006.

But as the rest of the article details, every release they've put out has some kind of change, including episodes I-III. They also have a version that's chopped down to 4:3 which is kind of insane.

I kind of get the feeling Lucas places way more importance on all these little changes and the technology behind them than the viewers do.
