Can somebody out there recommend a piece of PC software to generate good-looking (preferably customizable) graphs that I can export as .eps, .pdf or .ai?  I know Illustrator can do graphing, but I haven't got an effing clue as to how to *really* use their graphing tool, and I am pretty sure it can't do logarithmic graphs.  And what I'm using now is some shit, let me tell you.

Man, grep + xgraph is totally 95% of the reason office workers should switch to Linux.

Since I was a science student, I use MATLAB's graphing functions, which are pretty precise since MATLAB is a maths programme, which I know is of zero use to you whatsoever.

I got nothing else.

I'm with homo on the Matlab jump off. However, you can uses Open Office's chart/graph situation with ease and create really bland things.

you can actually do pretty precise formatting in excel, if you already have access to it.  what exactly are you doing?
